Frittata Recipe
Frittatas are a wonderfully simple breakfast food. An omelette baked in a muffin cup, you can make them from any left over items in your fridge.
Here's a very simple frittata recipe:
6 eggs
1/4 cup milk
salt and pepper to taste
Beat the eggs, milk, and seasoning in a glass measure cup - I like to use a 2 cup measure as it holds the perfect amount.
Line your muffin tray with silicone baking cups (I use ones like these: silicone baking cups on Amazon This is a affiliate link*) or spray them with nonstick spray. I find the baking cups work much better.
In each muffin cup, add your fridge-scrounged goodies. I like to put a little diced pepper, italian seasoning, feta crumbles, and spinach or dandelion greens in mine. One variant I haven't yet tried but am looking forward to is to put salmon and cream cheese in the muffin cups! Anything you have on hand will do - this is like making soup, make it yours!
Once your goodies are in the muffin tray, pour the egg/milk mixture into each muffin cup. You want them to be 3/4 full. Bake at 400 for 20-22 minutes.
Delicious, portable, and a wholesome source of protein - it's the perfect breakfast.
