Herb Marinated Feta
Remember how we made feta a couple of weeks ago? This is a great gift idea for the foodie in your life - and a fun appetizer to serve guests or dress up your dinner table.
You will need the feta we made earlier, cut into cubes or crumbled into large chunks. You will need the following spices: thyme, basil, sun-dried tomatoes, rosemary, pepper, and garlic. You will also need mason jars and lids for them. You have the option of adding red pepper flakes, but be careful not to add too many if you choose to include them.
You will build these in layers: a layer of garlic, a sprinkling of herbs, a layer of feta cubes, and repeat until the jar is full, ending with feta cubes on top. As you put in your layers place the sun dried tomatoes on the outside edge of the jar. Now pour a high quality olive oil on top until all of the cheese is submerged.
This will keep a long time in the fridge or in a cool, dark cellar. Oil was one of the original preservation methods for cheeses like feta in Greece. Fancy!
