Fudge Recipes
Fudge is a great treat for sharing with others. Below I have collected my favorite recipes:
Maple Fudge
12 oz pure maple syrup
24 oz white chocolate chips
Optional: 1.5 cups chopped pecans
Melt chocolate and syrup together. Pour into buttered 8x8 pan. If adding pecans, sprinkle evenly over fudge once in the pan. Chill 4-6 hours before cutting.
This also works with caramel!
Peanut Butter Fudge
1 cup unsalted butter (2 sticks)
8 oz peanut butter
1 tsp vanilla extract
1# confectioners sugar (4 cups)
In a heavy bottomed pot, melt butter and peanut butter. Stir in vanilla extract. Sift confectioners sugar to remove lumps, then slowly stir into mixture. The resulting fudge will be thick like cookie dough, press into buttered 8x8 pan and chill overnight.
PB/Dark Chocolate Swirl Fudge
12 oz peanut butter, divided in 2
3.5 cups semi-sweet or dark chocolate chips
3.5 cups white chocolate chips
In 2qt pot, melt half the peanut butter and the dark chocolate chips.
In a separate 2qt pot, melt the other half of the peanut butter and the white chocolate chips.
Working in layers, pour half the melted dark chocolate into a buttered 8x8 pan. Pour half the white chocolate mixture over it. Top with another layer of dark, and finish with another layer of white. Use a fork or skewer to swirl the layers together in and up-and-down motion, do not over-mix or the stripes will be indistinct (but still delicious). Chill overnight.
Chocolate Fudge
1/2 cup unsalted butter
1/4 cup milk
1 tsp vanilla extract
1 cup chocolate chips
3 cups confectioners sugar
Melt butter and chocolate chips in a heavy bottomed pot. Stir in vanilla extract and milk. Sift the sugar to remove lumps, then slowly combine and beat vigorously. Pour into 8x8 buttered pan and chill 4-6 hours before cutting.
